Serve with meat, fish, or crusty bread.
Slice eggplant, place slices on baking paper, sprinkle with salt. Leave a for a few moments, pat dry.
Gentle fry the slices and place in a baking dish.
Pour the tomato over the top. Sprinkle with feta. Bake at 180 degrees for 35 minutes.
