A quick and easy chicken dish that the kids will love.
Preheat oven to 180 degrees.
Line a baking tray with baking paper.
Combine flour, paprika, sugar, garlic salt and curry powder.
Place the chicken drums on a chopping board and with a large knife take the knuckles off, just where it gets skinny.
Toss the butchered drums in the flour mixture and place on the baking tray. Drizzle with olive oil and bake for 40 minutes.
Roughly chop the mint and mix into the yoghurt with the juice of half a lime.
Place the chicken lollipops on a serving dish with the yoghurt dressing in a separate ramekin.
Serve with parsnip and kumara wedges and a green salad.
8 – 12 chicken drumsticks
1 cup flour*
1 Tbsp sweet smoked paprika*
1 Tbsp sugar*
1 Tbsp garlic salt*
1 ½ tsp curry powder*
½ cup yoghurt*
¼ cup mint leaves
