This delicious beer battered fish recipe is designed to feed a family – simply halve the ingredients if you are only cooking for two.

Mix ¾ cup of flour with the baking powder. Add the beer and mix well to make a batter.

Heat the oil to 170 degrees. If you don’t have a thermometer, when the oil is preheated dip the handle of a wooden spoon or wooden chopstick into the oil. If the oil starts to bubble steadily, then it is hot enough for frying.

Lightly dust the fillets in the leftover flour and then dip into the batter. Hold the fillet over the bowl to allow excess batter to drip back into the bowl.

Place the fillet in the heated oil, two fillets at a time. Allow to cook until golden brown, remove from oil and place on a paper towel to drain.

Serve with mushy peas and homemade chips.
