GNOCCHI WITH LAMB RAGU

This recipe is designed to feed a family, cut back on ingredients if you are only cooking for one or two.

Method

Heat oil in a frypan over a medium heat, add onion and garlic, cook  gently until the onion is softened. Add tomato paste and cook for a minute. 

Increase heat and add mince, cook until brown. Add the tomato,  oregano water and balsamic vinegar. Season. 

Turn the heat to low and simmer for 20 minutes. 

Heat a large pot of water. Add gnocchi, cook until they rise to the  surface. 

Stir the gnocchi through the ragu and serve with parmesan cheese.


Ingredients

¼ cup olive oil 

1 onion, chopped 

2 cloves garlic, chopped 

2 Tbsp tomato paste*

500g lamb mince 

1 can chopped tomatoes*

⅓ cup chopped oregano leaves, or 2 Tbsp dried oregano*

2 ½ Tbsp balsamic vinegar *

Shaved parmesan to serve*
