GRILLED HALLOUMI SALAD

This simple halloumi salad can be thrown together for a quick and delicious mid-week dinner.

Method

Slice halloumi 1 cm thick. Heat the BBQ or a fry pan and fry until golden on both sides. 

Mix all other ingredients together and place on a serving plate. Top with the grilled halloumi and serve.

Ingredients

1 can chickpeas, drained 

2 shallots, thinly sliced*

1 handful rocket or spinach

4 stalks celery, sliced 

2 tsp capers*

4 Tbsp olive oil*

Juice of a lemon 

200g halloumi cheese
