LEMON COCONUT SLICE

A no bake citrus slice.

Method

Place butter and condensed milk in a small saucepan, stir over a gentle heat until the butter is mixed. 

Crush the biscuits finely. Add lemon rind and coconut. Mix. 

Line a tin with baking paper and press in the biscuit mixture. Refrigerate for an hour or two.  

Combine icing sugar, lemon juice and butter. Top the biscuit mixture with the icing and sprinkle  with coconut. Allow to cool and slice.

Ingredients

½ cup sweetened condensed milk*

125g butter*

250g milk arrowroot biscuits*

1 tsp grated lemon rind 

1 cup coconut*


For the lemon icing:

1¼ cups icing sugar*

3 Tbsp lemon juice 

15g butter*

2 Tbsp coconut*
