This is a simple potato salad, some things are best left that way. How you cut the potato depends on the size of the potato you use and how you like to salad to look, I like mine in large pieces served with simple green salad.
Place potatoes in a saucepan of boiling water and cook until soft. Drain and leave too cool. Cut into desired size.
Mix mayonnaise, flat leaf parsley and sour cream together, add a pinch of salt.
Put potato, capers and spring onions in a bowl, add mayonnaise dressing. Mix. Serve.

1/4 cup flat leaf parsley, chopped
3 spring onions, finely sliced*
2 Tbsp capers*
1/2 cup good quality mayonnaise*
1/2 cup sour cream*
Sea salt and black pepper*
